Fried Rice is a popular dish in many Asian and African countries, and is well known as a takeaway dish in Western nations such as the UK, US and Australia.

To western consumers, fried rice is generally assumed to be a part of the Chinese cuisine, but it is also part and parcel of Indian, Nigerian and Caribbean cuisine.

In China, domestic cooks often prepare fried rice from the left over of previous meals. Boiled rice is fried along with meat, eggs, poultry and vegetables.

The list of non-rice ingredients is endless. For Western countries, fried rice is seen as a meal that stands by it's own merits, is rarely made with left over and is usually paid for from a Chinese restaurant or takeaway.

Basic Egg Fried Rice

Rice, egg, onion, sesame oil, soy sauce, onion. Fried in a wok. Egg is sometimes scrambled below before being added to the wok.

Yeung Chow

Of Cantonese origin. Meal is fried in a wok. The main ingredients are pork, eggs, shrimp and peas. The pork is usually barbecued.

Fujian

The nearest region of China to the island of Taiwan. Because Fujian is a coastal province, it comes as no surprise that it's fried rice recipe has a seafood basis. Scallops, shrimp, chicken, oyster flavoured sauce, mushroom, tomato and asparagus.

Thai

Thai fried rice is stir fried. The main ingredients are crab, chicken, shrimp, onion, egg, tomato, coriander, garlic, chili and soy sauce.
